Ian and Linda Quinn are conscientious and detail oriented growers with the quality of their grapes being exceptional. I drew inspiration from my time working in Beaujolais, vinifiying with carbonic maceration (whole grape bunches, no juice) whilst the remaining fruit was de-stemmed and untouched during fermentation. The wine was pressed off into a Tinaja (amphora) for ageing.\u003c\/p\u003e\n\u003cp class=\"MsoNormal\"\u003eNo additions at any stage.
